CX-50 Turbo Brake Controller??

It also seems weird that after saying the brakes are required, it never talks about how to control those brakes.
There's a type of trailer brake called a 'surge' brake. It involves a master cylinder integrated into the trailer tow tongue. When the vehicle brakes, the trailer's momentum presses the master cylinder, which then applies pressure to the slave cylinders in the wheel hubs of the trailer. They need to be properly maintained (ie: the sliding tongue needs to be lubricated), but they require no modification to the tow vehicle. Perhaps that's what they're implying should be used?

Notice that the smallest one is for 7500lbs?

I think, if you drive carefully, load your trailer correctly to avoid sway, and watch your speed, you can pull 3500lbs without brakes. I know I've pulled at least 2000lbs without feeling like the vehicle brakes couldn't handle it.

The 6sp in the Turbo CX-30 and CX-50T is a heavier duty transmission than the NA. Possibly the CX-5 Turbo as well. It should be able to handle the extra loading.

I just got back from a 300mile round trip in 100deg weather, towing at least 2500lbs and had no overheating or brake concerns.

This was the trailer I towed at at least 10mph over the limit (max of 75mph) and there is no deficiency in the braking for towing. I do use the transmission to help slow things down when I'm planning ahead, but I have no concerns with not having enough braking for a panic stop. Of course that's going to add a lot of heat very quickly, but you should be able to do it once without overheating to the point of brake fade.

Can confirm 12mpg or 20L/100km for the whole trip, whether I kept it at 60mph or 75mph.
